ESPRESSO RUBBED NEW YORK STEAK
Yield: 8 servings
Ingredients: 3 tbs instant espresso powder 3 tsp ground sweet ancho chili or chili powder 2 tsp brown sugar 1 tsp Dijon mustard 2 tsp ground ginger 2 tsp salt 1 tsp freshly ground black pepper 1 tbs water 4 lb Harris Ranch New York Steak , cut into 1-inch steaks
Method: • Combine rub ingredients and rub over the entire surface of the meat. Cover and refrigerate for 1-24 hours. • Heat a cast-iron skillet over a medium flame. Sear steaks for 4 minutes per side for medium rare. • Allow meat to rest for 5 minutes before slicing.
