Hollandaise-South America Style
Recipe Courtesy of Chef Josh Silvers


3 egg yolks
1 Tablespoon water
1 Cup clarified Clover-Stornetta Butter
1 Lime - Zest and Juice
1/4 teaspoon cumin
2 Tablespoons chopped cilantro
Salt and Pepper

Take egg yolks and 1 tablespoon water and whisk over double broiler until mixture becomes thick and lemony in color, approximately 1 to 2 minutes. Slowly drizzle in butter.
Off heat, add cumin, lime zest and juice, salt & pepper and chopped cilantro.
Serve with delicious grass fed Estancia NY Steak.
