Salsa Verde

Ingredients:

1. 1 large shallot, minced
2. Champagne vinegar ( just enough to cover shallot)
3. 1 cup picked & cleaned Italian parsley
4. 1 garlic clove
5. 1 anchovy (I like the white ones)
6. ¾ cup good quality Oliver oil Squeeze of ½ a lemon
7. 1 TBL capers
8. Salt & Pepper to Taste

Method:
Macerate Shallot in vinegar & set aside

Put next four ingredients in the blender & blend on high,
Add the rest & serve
