YIELD: 1 QUART
1 C COFFEE 3 C CHICKEN STOCK 3 OZ BUTTER 2.5 OZ AP FLOUR 1 EA ONION DICED 1 TSP TABASCCO 1 TBS SALT 1 TSP PEPPER 1 TSP GARLIC CHOPPED 1 TSP THYME FRESH
METHOD: : SWEAT THE ONION IN THE BUTTER UNTIL IT HAS SOFTENED MEDIUM HEAT, NO COLOR, THEN ADD THE GARLIC AND THYME AND SWEAT 1 MIN-ADD THE FLOUR AND STIR TO MAKE A ROUX- ADD THE COFFEE AND STIR UNTIL THICK- ADD HALF OF THE STOCK AND STIR UNTIL THICK-ADD THE REMAINING STOCK AND TABASCO AND KEEP STIRING UNTIL GRAVY CONSISTENCY- COOK FOR 5 MIN LONGER UNTIL THERE IS NO FLOUR TASTE, SEASON WITH SALT AND PEPPER. POUR OVER CHICKEN FRIED STEAK AND TOP WITH 2 SUNNY SIDE EGGS
