BROWN SUGAR YAMS

Yield: 4 portions

Ingredients:
¼ c unsalted butter
¾ c packed brown sugar
¼ c water
1 tsp salt
½ tsp ground nutmeg
¼ tsp ground ginger
Pinch ground cinnamon
4 lb garnet yam, peeled and cut into wedges

Method:
• Preheat oven to 400f.
• Combine butter, sugar, water, salt and spices in a sauce pan and bring to a boil. Add potatoes and toss until well coated.
• Arrange in one layer on a baking sheet lined with parchment paper and bake until tender, about 40 minutes.
• Season to taste with salt and pepper.
