Roasted and braised pork butt

Serves 10

1 Boneless pork butt, cut into four pieces
1 Yellow onion, chopped
1 One inch piece of ginger
¼ Cup Salt
2 Oz Kombu
1 Cup Apple juice
2 Teaspoons Fish sauce
1 Head Garlic, chopped in half

Preheat oven to 400 degrees. Salt cut up pork butt, place on a sheet tray and bake for 1 hour. Remove pork from oven, the meat should have a nice crust. Form a canoe shape with a two foot long sheet of aluminum foil. Place roasted pork with the rest of the ingredients in the foil canoe. Wrap the ingredients tightly in the foil, taking care not to spill the apple juice. Cook for one hour at 300 degrees. Remove from oven and allow to cool for twenty minutes. Remove meat form foil, discarding everything else in the foil canoe. Chop the cooked pork butt and serve with quick kimchee.
