Host Clark Wolf talks with Audrey Hitchcock, owner and cheesemaker at Ramini Mozzarella. Audrey shares the story of her path to making mozzarella di bufala with milk from her herd of water buffalo, along with her husband Craig Ramini, starting their operation in 2009. Tragically, Craig passed away in 2015 after a battle with cancer. Audrey has continued to take care of the herd, and only milks once a day, leaving the other portion of the milk for the calves, keeping mothers and babies together.
