Host Clark Wolf talks with Marc-Henri & Maud Jean-Baptiste, Co-Owners of Maison Porcella, about where the brand comes from, Maud’s background, how the business came about, their catering, pâtés, the Bistro & Retail shop in Windsor, Marc-Henri’s personal & professional background, his world travels, his favorite station in the kitchen & his passion for charcuterie.

In the latter half of the show, they discuss the types of meat offered at Maison Porcella, Marc-Henri’s techniques used in the creation process, becoming USDA certified, visiting the restaurant before it closes and which farmer’s market they’ll be at before they take some time
